Come with us asparagus growers to collect and prepare our white asparagus from Zambana.
We start the morning at the municipal canopy of Zambana Vecchia and after getting to know each other, with a short walk we reach the fields. Here, hands in the ground, we teach you how to collect asparagus. It sounds easy, but it takes technique!
Back at the Canopy, we show you how to clean and cook them. Taste them fresh in the risotto, with a glass of wine or apple juice.
After enjoying them together, we say goodbye and leave you a bunch of asparagus to replicate the recipe at your home.
