Canederli

Recipe

Ingredients:
  • 4 slices of stale bread
  • 2 eggs
  • 100 g mortadella
  • 100 g speck
  • 100 g lucanica sausage
  • 1/2 onion
  • 200 ml milk
  • a sprig of parsley, chopped
  • 250 g of bread crumbs
  • salt
  • pepper
  • nutmeg
  • 100 g of grated Trentino Grana cheese
  • meat stock
  • Trentino Garda extra virgin olive oil

Preparation time: 20 minutes

METHOD:

First of all, make a good stock.

Put the stale bread to soak in milk then mix well, preferably with your hands.

Finely chop the onion and fry it in oil with diced mortadella, speck and lucanica.

Add them to bread with the eggs, parsley, nutmeg, salt and pepper. Mix well. Lastly, add the bread crumbs. Wet your hands and form the dough into balls of equal size.

Strain the stock, bring to a boil and drop the canederli in one at a time. Once they have risen to the surface keep on the boil for another 10 minutes. 

Strain and serve sprinkled with grated Grana cheese.
