This is Trentino’s sparkling wine excellence, born over a century ago from Giulio Ferrari’s visionary idea.
Elegant and delicately effervescent, it’s made from Chardonnay, Pinot Noir, Pinot Blanc or Pinot Meunier grapes.
Produced using the traditional method, it undergoes a long aging on the lees – from 15 months to over 10 years – with bottle refermentation, riddling and disgorgement. As the first Italian DOC for classic method sparkling wines, it’s now the most uncorked sparkling wine in the country.
Base wine: The grapes used are mainly Chardonnay or Pinot Noir (but also Pinot Blanc or Pinot Meunier), and they are processed using the traditional method of bottle fermentation.
Tirage (prise de mousse): After the first fermentation, selected sugars and yeasts are added to the still base wine to initiate the second fermentation.
Remuage (riddling): The bottles are rotated daily so that the fermentation sediments collect in the neck of the bottle (placed upside down).
Disgorgement: The spent yeasts are removed, either mechanically or manually. Finally, the bottle is topped up with a mixture of fine wine and sugar (liqueur d’expédition), a secret recipe of each sparkling wine producer..
